MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Quesadillas De Huitlacoche Categories: Mexican, Appetizers, Tortillas, Chilies Yield: 8 Servings 1 kg Huitlacoche or squash -flowers 8 Fresh tortillas 1 Epazote sprig; chopped 14 cl Garlic; diced Serrano chili; as desired 1 Onion; diced Salt Wash the huitlacoches well. Toast and dice the serrano chilies. Fry the onion and garlic. Add the huitlacoche, chili, the epazote and salt and cover the pan. Leave on high heat until the huitlacoches are well cooked. Fill the tortillas, and fold them to form quesadillas. Cook on both sides.
