MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chile Con Queso Categories: Vegetables, Chilies, Cheese, Dairy Yield: 24 Servings 2 tb Butter 1 md Onion; chopped 2 cl Garlic; minced 4 oz Can chopped green chilies 2 tb Corn starch 1 c Whole milk 2 1/2 c Cheddar cheese; shredded 2 c Monterey Jack cheese; - shredded Tortilla chips MMMMM--------------------------OPTIONAL------------------------------- Tomato; chopped Jalapeno peppers; sliced Cilantro; minced In a saucepan, heat butter over medium-high heat; saute onion and garlic until tender. Add chiles; cook and stir 5 minutes. In a small bowl, mix corn starch and milk until smooth; stir into onion mixture. Bring to a boil; cook and stir until thickened, 1 to 2 minutes. Reduce heat to low; gradually stir in cheeses, adding in small amounts and allowing cheese to melt between additions. Serve warm with chips. If desired, top with tomato, jalapeno, and cilantro.
