MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Grilled Elote Flatbread Categories: Vegetables, Breads, Cheese, Herbs, Chilies Yield: 12 servings 2 md Sweet corn ears; husked 3 tb Olive oil; divided 1 lb Pizza dough; thawed 1/2 c Mayonnaise 1/3 c Cotija cheese; crumbled, - divided 1/3 c Fresh cilantro; chopped, - divided 1 tb Lime juice 1/2 ts Chilli spice mix 1/8 ts Pepper Brush corn with 1 tb oil. Grill corn, covered, over medium heat until lightly browned and tender, 10 to 12 minutes, turning occasionally. Cool slightly. Cut corn from cobs; transfer to a large bowl. On a lightly floured surface, roll or press dough into a 15x10" oval (about 1/4" thick); place on a greased sheet of foil. Brush top with 1 tb oil. Carefully invert crust onto grill rack, removing foil. Brush top with remaining 1 tb oil. Grill, covered, over medium heat until golden brown, 2 to 3 minutes on each side. Remove from grill; cool slightly. Add mayonnaise, 3 tb cheese, 3 tb cilantro, lime juice, chili powder, and pepper to corn; stir to combine. Spread over warm crust.
