MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gallina Mexicana (Mexican Style Chicken) Categories: Chicken, Mexican Yield: 6 Servings 1 lg Fryer chicken; - cut for frying 1 1/2 c Rice 1/4 c Olive oil 3 Tomatoes; peeled, chopped 2 cl Garlic; minced 1/2 ts Paprika 1 md Green pepper; chopped 5 c Water; boiling 1 md Onion; chopped 1 ts Sugar 2 ts Chicken bouillon powder Pepper; to taste 2 Bay leaves In a large skillet, heat oil and brown chicken pieces--drain on paper towels. Combine garlic, green pepper, and onion to skillet and saute until onion is clear. Add rice and saute for a few minutes--add tomatoes, paprika, and bay leaves. Dissolve bouillon in 5 cups boiling water. Add to mixture, then add chicken back into skillet--continue cooking on low heat for 1 hour.
