MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Huevos Revueltos Rancheros (Ranch Style Scrambled Eggs) Categories: Mexican Yield: 4 Servings 1 md Onion; minced 16 oz Can diced tomatoes -OR- 3 Tomatoes; peeled, chopped 1/2 md Bell pepper; sliced 1 ts Cilantro; minced 2 tb Hot sauce 8 Eggs Salt & pepper; to taste Oil; for cooking 1 ds Sugar Corn tortillas In a large skillet, heat oil and saute onion, garlic, bell pepper, and hot sauce in oil until soft and transparent. Add tomatoes, sugar, cilantro, and seasonings--then simmer for 15 minutes. Beat eggs with salt and pepper to taste. Mix in with mixture above--stir as eggs begin to set.
