MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pinakbet with Pork Categories: Filipino, Vegetables, Shrimp, Pork Yield: 4 Servings 3 cl Garlic 5 sl Ginger; thin 2 tb Vegetable oil 1 Onion 4 tb Bagoong alamang (fermented -shrimp paste) 4 md Tomatoes 2 lb Lean pork; cut into cubes 6 Asian eggplants; sliced into -2" pieces 3 md Bitter melon 1/4 lb Okra 1/4 lb Long beans; cut into 2-4" -pieces Pinakbet is a dish of sauteed mixed vegetables usually including some bitter melon. Slice bitter melon into half lengthwise; remove seeds and white center. Slice bitter melon into 2" pieces. Take bitter melon and salt good and let set in bowl for about 15 minutes while you prepare other stuff. This will remove some of the bitter taste and make it just right. Heat oil in large pot. Add garlic ginger and onions to heated oil and saute until soft (onions will be translucent) Add pork and cook until browned. Add tomatoes and Bagoong alamang, and cook for 5 minutes Add 3 or 4 cups of water and bring to a boil Stir in eggplant, bitter melon, okra and long beans. Simmer for 15 minutes or until tender, stirring occasionally. Salt to taste. MMMMM
