MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Indian Spiced Quinoa With Raisins And Pine Nuts Categories: Pilafs Yield: 4 Servings 1 tb Olive oil -OR- 1/4 c Water 2 lg Shallots; minced 1 ts Fresh ginger; minced 1 1/2 c Quinoa; rinsed; drained 1/2 ts Ground cardamom 1/2 ts Ground coriander 1/4 ts Ground cumin 1/4 ts Cayenne 3 c Vegetable broth or water; - hot Salt Black pepper; freshly ground 1/3 c Golden raisins 1/4 c Pine nuts; toasted 2 tb Fresh parsley; minced Heat the olive oil or water in a large skillet over medium heat. Add the shallots and ginger and cook, stirring, until the shallots are lightly softened, about 1 minute. Add the quinoa along with the cardamom, coriander, cumin, and cayenne, and stir to coat with oil. Stir in the hot broth and bring to a boil. Reduce the heat to low and season to taste with salt and pepper. Cover and cook until all of the water is absorbed, 12 to 15 minutes.
