MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Eggplant Kulambu Categories: Indian Yield: 1 Batch 1 Eggplant 1/2 ts Fenugreek seed 1 ts Curry powder with chili Ghee 1/2 ts Tamarind paste 1/2 sm Onion; diced 1 c Coconut milk Salt Curry leaves 1/2 c Water Saute eggplant in ghee until cooked and remove it from the ghee. In another 1 tb ghee fry the onion and fenugreek seed and curry leaves. Add the curry powder, salt, and eggplant. Mix tamarind and water and add this to mixture. Simmer for 10 minutes.
