MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Nam Prik Gaeng Kheow Wan (Green Curry Paste) Categories: Spices, Thai Yield: 1 Cup 1 tb Coriander seeds 1 ts Cumin seeds 5 Green bird's-eye chiles; up -to 10 3 tb Shallots; sliced 3 cl Garlic; sliced 1 ts Galangal; sliced 1 tb Lemongrass; (inside of -thickest part of stem -only), sliced 1/2 ts Kaffir lime zest; grated 1 ts Coriander root; chopped 5 Black peppercorns 1 ts Salt 1 ts Dried shrimp paste; roasted Preparation time: 15 minutes Cooking time: 5 minutes Dry-fry the coriander and cumin seeds in a wok over low heat for about 5 minutes, then grind to a powder. Add the rest of the ingredients, except the shrimp paste, and grind mix well. Add the shrimp paste to the spice mixture and grind to obtain 1 cup of fine-textured curry paste.
