MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Greek Chicken & Rice Categories: Poultry, Vegetables, Herbs, Rice Yield: 4 Servings 1 lb Chicken; boned, skinned, - in 1" cubes 1/4 ts Garlic powder 1/4 ts Pepper 2 ts Olive oil 12 oz Jar marinated quartered - artichoke hearts; drained, - chopped 12 oz Jar roasted sweet red - peppers; drained, chopped 1/3 c Oil-packed sun-dried - tomatoes; chopped 1/3 c Greek olives; sliced 8 13/16 oz Pkg ready-to-serve brown - rice 1 tb Fresh parsley; minced Sprinkle chicken with garlic powder and pepper. In a large skillet, heat oil over medium heat. Add chicken; cook and stir until no longer pink, 8 to 10 minutes. Stir in artichokes, roasted peppers, tomatoes, and olives. Cook and stir until heated through, 3 to 5 minutes. Meanwhile, prepare rice according to package directions. Serve with chicken. Sprinkle with parsley.
