MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Uszka Categories: Polish, Ukrainian, Christmas Yield: 4 Servings Dough 6 oz Flour 1 Egg 1 pn Salt MMMMM--------------------------STUFFING------------------------------- 8 oz Mushrooms; chopped fine 1 sm Onion; chopped fine Butter 1 tb Bread crumbs 1 Egg; beaten Knead flour with egg and 1 pn salt into a dough that is somewhat stiffer than pasta dough. Roll out thinly, cut into 4 cm squares. The greater the skill of the cook, the smaller the uszka. Saute mushrooms and onion in a bit of butter. Stir in breadcrumbs and beaten egg and correct seasoning with salt and pepper. Place some stuffing on each pasta square, fold over diagonally, and press the edges firmly together.
