* Exported from MasterCook Mac * Blades's Black Beans Recipe By : Ruben Blade Serving Size : 8 Preparation Time :0:00 Categories : Beans Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb Dried black beans 6 c Chicken stock 4 tb Olive oil 1 c Yellow onion -- minced 1 Plum tomatoes -- chopped 1/2 c Green bell pepper -- minced 1/4 c Cilantro -- chopped 1 tb Balsamic vinegar 1 tb Sugar 2 ts Soy sauce 1 1/2 ts Oregano 1/8 ts Lemon pepper seasoning 1 cl Garlic -- minced 1/4 lg Ham -- diced 1/2" Salt -- to taste Sour cream -- for garnish Cilantro sprigs -- for garnish Soak the beans overnight in cold water. Drain. Place the beans in a large, heavy pot,cover with water and simmer for 4 hours, adding some stock to cover the beans as the liquid is reduced. Meanwhile, heat the oil in a skillet over medium high heat. Saute the onion until golden, then add the remaining ingredients except the ham, salt, and garnishes. Simmer for 3 minutes, stirring. tir the ham and the contents of the skillet into the beans. Simmer, covered for 2 hours, stirring and adding more stock to cover the beans as necessary.
