MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Curried French Lentils Categories: Vegetbles Yield: 9 Cups 6 c Water 1 c Dry/uncooked French green - lentils 1 md Yellow or white onion (2 c); - chopped 1 md Yam or sweet potato - (1-1/2 c); peeled, - chopped into 1/2" chunks 2 c Cauliflower florets; small 2 Celery ribs (2/3 c); sliced 14 1/2 oz Can diced tomatoes - (1-1/2 c); undrained 1 tb Yellow curry powder 2 ts Dried Italian herb seasoning 1 ts Granulated onion 1 ts Granulated garlic 4 c Swiss chard or other greens; - coarsely chopped Preparation time: 25 minutes Cooking time: 45 minutes Bring the water and lentils to a boil in a soup pot over medium-high heat, uncovered. Reduce the heat to medium-low and cook uncovered, stirring occasionally, for 20 minutes. Stir in the onion, yam or sweet potato, cauliflower, celery, diced tomatoes (including the juice), curry powder, Italian seasoning, and granulated onion and garlic. Cover and simmer at a low boil for 15 minutes. Stir in the greens, then cover and cook for 5 to 10 minutes more, or until the lentils and yams or sweet potatoes are tender.
