* Exported from MasterCook * Quinoa Pilaf Recipe By : Steven Raichlen for Prevention (Oct/96) Serving Size : 4 Preparation Time :0:40 Categories : Casserole Vegetable Entree Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 c Quinoa 1 1/2 tb Extra virgin olive oil 1 md Onion -- chopped 2 cl Garlic -- minced 1/4 c Pine nuts 2 Red bell peppers -- diced 1 md Sweet potato -- cubed 1/4 c Golden raisins 4 c Vegetable broth Ground black pepper Rinse quinoa with cold water and drain well. Heat oil in a large non-stick frying pan. Add onion, garlic, pine nuts, and peppers and cook over medium heat until lightly browned, about 5 minutes. Add potato, raisins, and quinoa and cook for 1 minute. Stir in broth and black pepper; bring to a boil. Reduce heat to low, cover and simmer until liquid is absorbed and quinoa is tender, 15 to 20 minutes. Fluff quinoa mixture with a fork and serve at once.
