      Title: Prize Winning Potato Salad
 Categories: Vegetables, Huge size
      Yield: 60 Servings

     16 lb Potatoes; cooked & cubed
     32    Eggs; hard-cooked, chopped
      2 lb Bacon; cookd & crumbled
     16    Scallions; sliced thin
      4 c  Mayonnaise or
           - salad dressing
      4 c  Sour cream
      1 c  Prepared horseradish
    1/2 c  Parsley; chopped
      2 tb Salt
      2 tb Pepper

  Toss peeled, cubed potatoes, eggs, bacon, and onions. Combine
  remaining ingredients; mix until smooth. Toss with potato mix.
  Chill for several hours.
