* Exported from MasterCook * Woodstock Wild Rice Recipe By : Farewell to Fat, Richard Simmons, page 158 Serving Size : 4 Preparation Time :0:55 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 14 1/2 oz Fat-free reduced-sodium - chicken broth 1 c Water 1/2 c Wild rice 1/2 c White rice 1 1/2 c Fresh mushrooms -- sliced 1 cl Garlic -- minced 1/2 ts Salt 1 pn Saffron or turmeric 1/2 c Green onions -- chopped, - green and white parts 1/4 c Fresh parsley -- chopped 2 ts Lemon zest -- grated Lemon zest strips Flat-leaf Italian parsley sprigs In medium saucepan bring chicken broth and water to boil over medium heat. Add wild rice. Simmer, covered, over low heat for 25 minutes. Uncover. Add white rice, mushrooms, garlic, salt, and saffron. Bring to boil again. Cover. Simmer 20 minutes or until rice is tender and most of liquid is absorbed. Remove from heat. Stir in green onion and parsley. Cover and let stand 10 minutes. Just before serving, stir in lemon zest.
