---------- Recipe via Meal-Master (tm) v8.02 Title: Summer Apple Salad Categories: Diabetic, Fruits, Salads Yield: 12 Servings 3 pk Unflavored gelatin 1 c Water; cold 3/4 c Sugar 1 1/2 ts Salt 3 c Water; boiling 1/3 c Vinegar 1/4 c Lime juice 2 1/2 c Apples (2 lg); unpeeled, - finely chopped 1 c Green pepper; - finely chopped 1/2 c Green onion; chopped Lettuce Apple wedges (optional) Soften gelatin in cold water; stir well. Add sugar and salt. Gradually add boiling water, stirring until gelatin is dissolved. Add vinegar and lime juice. Chill until consistency of unbeaten egg white. Fold in apple, green pepper, and onion. Spoon into twelve 1/2 cup individual molds, and chill until set. Unmold on lettuce-lined plate, and garnish with apple wedges, if desired.
