MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Make-Ahead Hearty Six-Layer Salad Categories: Pasta, Greens, Poultry, Vegetables, Dairy Yield: 12 servings 1 1/2 c Uncooked orichette (small - shells) 1 tb Canola oil 3 c Lettuce; shredded 3 lg Hard-boiled eggs; sliced 1/4 ts Salt 1/8 ts Pepper 2 c Chicken; cooked, shredded 10 oz Box peas; thawed MMMMM--------------------------DRESSING------------------------------- 1 c Mayonnaise 1/4 c Sour cream 2 Green onions; chopped 2 ts Dijon mustard MMMMM--------------------------TOPPINGS------------------------------- 1 c Colby or Monterey Jack - cheese; shredded 2 tb Fresh parsley; minced Cook pasta according to package directions; drain and rinse with cold water. Drizzle with oil and toss to coat. Place the lettuce in a 2-1/2 qt glass serving bowl; top with pasta and eggs. Sprinkle with salt and pepper. Layer with chicken and peas. In a small bowl, mix dressing ingredients until blended; spread over top. Refrigerate, covered, for several hours or overnight. Just before serving, sprinkle with cheese and parsley.
