* Exported from MasterCook * Pressure Cooked Grain Salad with Artichokes and Tomatoes Recipe By : Cooking Under Pressure, copyright 1989 Serving Size : 6 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 c Cooked grains -- see note * 1 c Marinated artichoke hearts -- - coarsely chopped 1/4 c Sun-dried tomatoes packed in - oil -- finely minced 3/4 c Fresh basil, cilantro, or - parsley -- minced, - tightly packed 1/4 c Olive oil -- up to 1/3 c), - see note * 1/4 c Lemon juice -- or more Salt and pepper -- to taste Garnish: Greek olives (optional) * Follow directions for pressure cooking specific grain used. See Charts. Try rice, pearl barley, Job's Tears, or quinoa. Cool cooked grain to room temperature before proceeding. For a different flavor, include 1 to 2 tb of the artichoke or sun-dried tomato marinating oil in place of an equivalent amount of olive oil. In a large bowl or storage container, combine the ingredients and toss to blend thoroughly. Adjust seasonings and serve immediately, or chill until needed. Garnish with olives, if desired.
