---------- Recipe via Meal-Master (tm) v8.05 Title: Zucchini Mint Salad Categories: Salads, Appetizers, Vegetables Yield: 6 Servings 4 c To 6 fresh spinach, torn 1 To 2 zucchini, cut into bite -sized pieces 1/2 Red onion, sliced 3/4 c Crumbled feta cheese Dressing: 2/3 c Olive oil 3 tb Bottled mint sauce 2 tb Fresh lime juice 1 ts Dijon mustard 1 cl Garlic, minced 1/4 c Chopped fresh mint Pepper to taste In a large salad bowl, combine spinach, zucchini, onion and feta cheese.
