* Exported from MasterCook * Grilled Chicken And Avocado Salad Recipe By : Sheryl Donner, IA, USA, May 1998 Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Chicken and Marinade: 2 lb Chicken breasts -- - boned, skinned, julienned 1/2 c Olive oil 1 tb Toasted sesame oil 2 cl Garlic -- minced 1/2 ts Fresh ginger root -- minced 1 Dried hot Thai chili -- minced 1/2 ts Salt Salad: 1 lb Spinach -- bite-sized pieces 2 Avocados -- peeled and sliced 2 Tomatoes -- sliced 1/4 c Croutons Dressing: 2 Lemons -- juice of 2 cl Garlic 1 ts Salt 1 ts Black pepper -- fresh ground 1 tb Honey 1 c Olive oil Mix olive and sesame oils; add minced garlic, minced ginger root, salt, and minced Thai pepper in a nonreactive container. Marinate chicken breast pieces 4 hours or more. Drain marinade and grill chicken on a pre-heated grill until thoroughly cooked. Let chicken cool to room temperature. Blend lemon juice, garlic, honey, salt, and pepper. With blender running, slowly add olive oil and emulsify dressing. Divide spinach into four bowls.
