MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Garden Lentil Salad (Bon Appetit) Categories: Salads Yield: 4 Servings 1 c Lentils 20 Cherry tomatoes; halved 1 c Red onion; chopped 1/2 c Radishes; chopped 1/2 c Parsley; chopped 1/3 c Brine cured black olives; - pitted, chopped 3 tb Capers; drained 8 tb Olive oil; divided 1 Yellow bell pepper; chopped 3 tb Fresh lemon juice 8 oz Feta cheese; crumbled Hard boiled eggs; chopped Cook lentils in pot of boiling salted water until just tender, about 20 minutes. Drain and place in large bowl. Mix in tomatoes, onion, radishes, parsley, olives, and capers. Heat two tablespoons oil in skillet over medium heat. Add pepper and saute until just tender. Using slotted spoon, transfer pepper to bowl with lentils. Pour oil from skillet into measuring cup and add enough additional oil to make 1/2 cup.
