      Title: Fennel Salad With Citrus Dressing

      Yield: 5 Servings

      1 lg Fennel bulb; thin sliced
      1 sm Apple; thin sliced
    1/4 c  Sweet onion; sliced

MMMMM--------------------------DRESSING-------------------------------
    1/3 c  Olive oil
    1/2 ts Lemon zest; grated
      2 tb Lemon juice
    1/2 ts Orange zest; grated
      2 tb Orange juice
    1/2 ts Dijon mustard
    1/2 ts Salt
    1/8 ts Pepper

  Combine fennel, apple, and onion. In another bowl, whisk together
  dressing ingredients. Pour over salad; toss to coat. Refrigerate
  until serving.
