* Exported from MasterCook Mac * Pacific Sunset Salad Recipe By : Delicious Decisions/tpogue@idsonline.com Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Dressing: 1/2 c Mayonnaise 1/2 c Plain yogurt 1/2 c Sour cream 3 tb Lemon juice 1/2 ts Dry mustard 1/2 cl Garlic -- minced 1 tb Curry powder Salt and pepper -- to taste Salad: 1 lb Pork roast 1/4 c Soy sauce 1/2 cl Garlic -- minced 2 bn Spinach 12 sl Fresh pineapple 2 Papaya -- sliced 8 oz Macadamia nuts Prepare dressing. Refrigerate at least 1 to 2 hours before serving. Cut pork into thin strips. Mix soy sauce and garlic and pour over pork, covering all pieces. Marinate at room temperature 30 minutes. Pour off marinade and cook pork strips under broiler until done, about 3 minutes each side. Remove and drain on paper towels. When cool, cut into bite sized pieces. Refrigerate. Wash spinach thoroughly. Remove stems and damaged leaves. Dry thoroughly. Place leaves on chilled salad plates and top with pineapple and papaya slices, follow with pork, and sprinkle on nuts.
