                        GREEN OLIVE-CUCUMBER SALAD

   1       pk           Lime-flavored gelatin -- 3oz.
   1       c            Water -- hot
     1/2   c            Water -- cold
   1       t            Lemon juice
   1       t            Lemon rind -- grated
   1       t            Onion -- grated
     1/2   ts           Salt
   1       md           Cucumber -- peeled and chopped
     1/3   c            Green olives -- onion-stuffed

  Dissolve gelatin in hot water.  Add cold water, lemon
  juice, lemon rind, onion, and salt.  Chill until
  slighlty thickened.  Fold in cucumber and olives.
  Pour into a 1-quart mold and chill until firm.
