* Exported from MasterCook * Field Ripened Tomatoes With Green Beans Recipe By : Chef du Jour Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Red tomatoes 2 Yellow tomatoes 1 tb Shallots -- diced 1 ts Extra virgin olive oil Coarse fleur de sel salt -- - to taste White pepper -- to taste 1 tb Fresh basil -- julienned 1 c Green beans -- blanced 1 c Mesclun greens 1 ts Balsamic vinegar -- 100 year old Slice the tomatoes 1/2" thick and place in a shallow dish. Add the diced shallots, olive oil, salt, and pepper. Add julienne of basil. Marinate for 2 hours. Serve chilled with green beans and mesclun greens to garnish.
