MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chinese Eggplant Categories: Eggplant Yield: 4 Servings 2 md Eggplants; - cut in 1/2" strips 1/2 ts Fresh ginger; minced 1 Serrano; minced 3 tb Oil 1/2 ts Mustard powder Chinese parsley; - a few sprigs MMMMM---------------------------SAUCE-------------------------------- 1/2 c Water 1 tb Jaggery 1 tb Corn starch 1 tb Sesame oil; not dark 2 ts Lemon juice 1 tb Soy sauce Salt; to taste Heat oil in a wok. Add ginger, serrano, and mustard powder. Stir a few minutes, add eggplant, and stir-fry until cooked. In a small bowl, combine all ingredients for the sauce.
