MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Zucchini Stew In Foil Categories: Beef, Camping, Stew, Vegetarian, Zucchini Yield: 4 Servings 2 lb Stew beef; cubed 2 md Zucchini; sliced 4 Potatoes; peeled; cubed 2 Onions; sliced 4 Carrots; sliced 1/4" 2 cn Condensed mushroom soup Salt & pepper Combine all ingredients in large bowl and mix well. Prepare six 18" squares of heavy duty aluminum foil. Divide stew into 6 equal portions and spoon into foil. Season well. Join 4 corners of each square and twist top of bundles to seal. Refrigerate until fire is suitable for cooking. An even fire of hot gray coals is preferable to a red hot one. Grill for 50 to 60 minutes, never allowing fire to flame. This is a great camping dish since stew may be served in foil packages, and there are no dishes to wash. Note: This stew may be made without meat. Simply increase amount of vegetables.
