MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Savory Amaranth Porridge Categories: Breakfast, Cereals Yield: 4 Servings 1 c Amaranth 3 c Water or vegetable broth Salt 3 Scallions; minced 1 tb Low-sodium tamari 1 ts Dark sesame oil 2 tb Pumpkin seeds; roasted This porridge is similar in texture to a restorative Chinese congee and may be eaten at any time of day, including breakfast. To prepare this as a more traditional hot breakfast cereal, omit the last 4 ingredients and top as you would oatmeal--with nondairy milk, sweetener, and a sprinkling of granola or raisins. In a medium-sized saucepan over medium-high heat, combine the amaranth and water and bring to a boil. Reduce the heat to low, add salt to taste, and simmer until the water is absorbed, about 30 minutes. During the last 5 minutes of cooking time, stir in the scallions, tamari, and sesame oil.
