MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Breakfast Quiche Categories: Pastry, Pork, Eggs, Cheese, Dairy Yield: 6 Servings 1 1/4 c All-purpose flour 1/4 ts Salt 1/2 c Butter; cold 3 tb Ice water; up to 5 tb MMMMM--------------------------FILLING------------------------------- 12 sl Bacon; cooked, crumbled 1/2 c Pepper jack or Monterey jack - cheese; shredded 1/2 c Sharp Cheddar cheese; - shredded 1/3 c Onion; fine chopped 4 lg Eggs 2 c Heavy whipping cream 3/4 ts Salt 1/4 ts Sugar 1/8 ts Cayenne pepper Combine flour and salt; cut in butter until crumbly. Gradually add 3 to 5 tb ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour. Set oven @ 450 F/232 C. On a lightly floured surface, roll dough to an 1/8" thick circle; transfer to a 9" pie plate. Trim crust to 1/2" beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375 F/190 C. Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30 to 35 minutes.
