MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pumpkin Latkes Categories: Squash, Breads Yield: 8 Servings 2 c Pumpkin; roasted, pureed -OR- 16 oz Can pumpkin; NOT pie filling 1 c Flour 1/2 c Brown sugar; packed 2 ts Cinnamon 1/2 ts Nutmeg 1/2 ts Cardamom 1 ds Ginger 1/2 ts Salt 3 lg Eggs Oil for frying Combine all ingredients and mix well to form a thick batter. Heat oil in skillet (preferably cast iron). Drop tablespoons full of batter into oil. When bubbles begin to form in batter turn latke and cook until golden brown. Serve hot with applesauce.
