Leave for 15 minutes. After 15 minutes, melt the butter and stir it into the cornmeal. Beat the egg into the milk then stir this mixture into the cornmeal thoroughly ensuring there are no lumps. In a separate bowl combine the flour, sugar, baking powder, and salt. Add these dry ingredients to the cornmeal mixture and combine with a few swift strokes. Let sit for a further 15 minutes then stir in the blueberries. Cook the batter a couple of big spoonfuls at a time in a non-stick pan. No butter or oil required.
