---------- Recipe via Meal-Master (tm) v8.05 Title: Apple Pancakes Categories: Breads Yield: 4 servings 3/4 c Whole-wheat flour 3/4 c All-purpose flour 1 tb Granulated sugar 1 1/2 ts Baking soda 1 1/2 ts Baking powder 1/2 ts Ground cinnamon 1/2 ts Salt 1 ds Nutmeg 1 1/2 c Buttermilk 1 tb Molasses 1 tb Vegetable oil 1 ts Lemon juice 1 Extra-large egg 1 Granny smith or other tart -apple ; peeled, cored, Chopped Nonstick cooking spray Recipe by: St. Louis Post-Dispatch 4/14/97 Combine the whole-wheat flour, all-purpose flour, sugar, baking soda, baking powder, cinnamon, salt and nutmeg. In a separate bowl, combine the buttermilk, molasses, oil, lemon juice and egg. Add to the flour mixture. Stir until mixed through. Do not overmix. Stir in the apple. Coat a griddle with the cooking spray and, using a 1/4-cup measure, ladle the batter onto the hot griddle. Cook until bubbles start to appear on top and the pancakes are browned on the bottom.
