MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sunrise Pancake Casserole Categories: Pork, Breads, Dairy, Cheese Yield: 8 servings 1 lb Spicy pork sausage 8 c Pancakes; in 1" pieces 8 lg Eggs 2 c Milk 1/2 c Syrup 1/2 ts Salt 1/2 ts Pepper 1 c Cheddar cheese; shredded Green onions; chopped In a large skillet, cook pork over medium heat until no longer pink, 6 to 8 minutes, breaking into crumbles; drain. In a greased 13x9" baking dish, layer half the pancake pieces and sausage; repeat layers. In a large bowl, whisk eggs, milk, syrup, salt, and pepper. Pour over pancakes. Sprinkle with cheese. Cover and refrigerate 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Bake, uncovered @ 350 F/175 C, until a knife inserted in the center comes out clean, 35 to 40 minutes. Let stand 5 minutes serving. If desired, sprinkle with green onions and serve with additional syrup.
