* Exported from MasterCook * Nutty Maple Waffles Recipe By : Carnation Serving Size : 8 Preparation Time :0:00 Categories : Waffles Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c All purpose flour 2 tb Granulated sugar 1 ts Baking powder 1/4 ts Salt 2 Eggs -- separated 12 oz Can evaporated skim milk 3 tb Vegetable oil 1/2 ts Maple flavored extract 1/2 c Pecans -- finely chopped In medium bowl, combine flour, sugar, baking powder, and salt; set aside. In large mixer bowl, combine egg yolks, evaporated skimmed milk, oil, and maple extract; beat well. Gradually add dry ingredients, beating well after each addition until smooth. In small mixer bowl, beat egg whites until stiff peaks form. Fold into batter. Preheat waffle iron according to manufacturer's instructions. Pour 1/2 cup batter onto hot iron; sprinkle with 1 tb chopped pecans. Bake 3 to 4 minutes or until steaming stops. Repeat with remaining batter and nuts. For Nutty Maple Pancakes: Pour 1/2 cup batter onto preheated greased griddle or electric skillet. Sprinkle with 1 tb chopped pecans; bake and turn.
