MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Hearty Slow-Cooker Breakfast Hash Categories: Pork, Potatoes, Vegetables, Herbs, Cheese Yield: 4 Servings 10 Frozen, fully-cooked, - breakfast sausage links 4 c Red potatoes; diced 4 md Carrots; diced 2 Green onions; thin sliced - (white & light green only) 2 tb Extra virgin olive oil 1 tb Red wine vinegar 1 tb Fresh dill; +2 ts, snipped, - divided 1 ts Kosher salt 1/2 ts Coarse ground pepper; - divided 1/4 ts Crushed red pepper flakes 2 tb Feta cheese; crumbled 1 tb Butter 4 lg Eggs 2 tb Syrup In a large skillet over medium heat, cook sausages, turning occasionally, until heated through, 8 to 9 minutes. Combine next 5 ingredients in a 3 qt slow cooker. Add 1 tb dill, kosher salt, 1/4 ts pepper and red pepper flakes. Arrange sausages on top of vegetable mixture. Cook, covered, on low until vegetables are tender, 5 to 6 hours. Transfer vegetables to a serving platter; sprinkle with feta cheese. Top with sausages. Meanwhile, in a large skillet, heat butter over medium heat. Add eggs; cook to desired doneness. Arrange eggs over vegetables. Sprinkle with remaining dill and pepper; drizzle with syrup.
