                              Red Devil Eggs

   7                    Eggs -- hard-boiled
   2      tb            Onion -- minced
   3      tb            Pickled jalapenos -- chopped
   2      ts            Juice from jalapenos
     1/2  ts            Cumin
     1/2  ts            Garlic powder
                        Salt and pepper -- to taste
   3      tb            Sour cream
                        Cayenne pepper or chili powder

Cut eggs in half lengthwise; scoop out yolks. Mash 1 egg white
(2 halves) with fork until crumbly. Add yolks and mash well. Add
onion, jalapenos and juice, cumin, garlic powder, salt and pepper,
and sour cream; mix well. Fill whites with yolk mixture. Sprinkle
with chili powder or cayenne pepper.
