                             Chicken Boursin

   4                    Chicken breast halvs -- skinned,
                        - boned
   4      oz            Boursin cheese
   2      lg            Egg -- beaten
   1      c             Breadcrumbs
     1/2  c             Butter -- melted
   4      tb            Parsley

Divide cheese into four parts and spread down middle of each chicken
breast. Roll breast around cheese. Dip rolled up chicken breast in
egg, then roll chicken in bread crumbs. Place in baking dish, seam
side down. (May be made one day ahead to this point.)

Cover with melted butter.

Bake for 20 to 30 minutes basting occasionally.

Garnish with fresh parsley.

Notes:

A Modern version of Chicken Kiev. May be prepared a day ahead to
allow flavors to blend.
