MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Moscato w/Garlic & Herbs Categories: Poultry, Mushrooms, Vegetables, Wine, Herbs Yield: 4 Servings 1 lb Boned, skinmed chicken; in - bite size pieces 1 tb Cornflour 1/4 c A-P flour 3 tb Olive oil; divided 1 lg Onion; chopped 2 cl Garlic; fine chopped 2 c Mushrooms; sliced 3/4 c Moscato wine 1/2 c Cream 1 tb (ee) chopped parsley & basil Salt & pepper Rice or pasta; to serve Mix the salt, pepper, cornflour and flour together. Place the chicken into a large bowl and sprinkle the flour mix over it. With your fingers, shake the chicken in the flour to coat. Heat a large skillet to medium and add oil. Add the chicken in batches and cook until lightly browned. (Don't overcook chicken) When all the chicken is cooked, transfer it to a clean bowl and set aside. Using the same skillet, add the remaining oil and the onion and garlic and saute for 3 minutes. Add the mushrooms and saute for about 3-4 minutes until they just begin to brown. Add the wine and stir to combine. Reduce the heat to medium and let the wine cook and then add the cream. Cook for about 6-8 minutes until the sauce begins to thicken. Taste and season with salt and pepper. Add the chopped parsley, basil and cooked chicken into the mushroom mixture and stir. Reduce the heat to low until ready to serve.
