* Exported from MasterCook * Broiled Ginger Chicken Recipe By : Quick Cooking Magazine, March/April '98, p. 19 Serving Size : 4 Preparation Time :0:00 Categories : Bobbie Not Sent Chicken Main Dishes Quick Cooking Magazine Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 boneless skinless chicken breast halves -- (about 1 lb.) 1/2 cup mayonnaise 1 tablespoon soy sauce 1/4 teaspoon ground ginger 1/8 teaspoon cayenne pepper Flatten the chicken to 1/4 inch thickness. Place on a broiler pan rack. Broil for 3 minutes on each side. Combine mayonnaise, soy sauce, ginger and cayenne; brush over chicken. Broil 2-3 minutes longer on each side or until juices run clear. Yield: 4 servings. Recipe submitted by Carol Bushell of Holyrood, Ontario, who reports that this is very moist and tender chicken. She also uses this chicken for appetizers and sandwiches.
