MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Baked Mushroom Chicken Categories: Poultry, Mushrooms, Herbs, Vegetables, Cheese Yield: 4 servings 4 Boned, skinned chicken - breast halves or thighs - (4 oz ea) 1/4 c A-P flour 3 tb Butter; divided 1 c Fresh mushrooms; sliced 1/2 c Chicken broth 1/4 ts Salt 1/8 ts Pepper 1/3 c Mozzarella cheese; shredded 1/3 c Parmesan cheese; grated 1/4 c Green onions; sliced Flatten each piece of chicken to 1/4" thickness. Place flour in a shallow bowl. Dip chicken in flour to coat both sides; shake off excess. In a large skillet, brown chicken in 2 tablespoons butter on both sides. Transfer to a greased 11x7-in. baking dish. In the same skillet, saute mushrooms in the remaining butter until tender. Add the broth, salt and pepper. Bring to a boil; cook until liquid is reduced to 1/2 cup, about 5 minutes. Spoon over chicken. Bake, uncovered, @ 375 F/190 C until chicken is no longer pink, about 15 minutes. Sprinkle with cheeses and green onions. Bake until cheese is melted, about 5 minutes longer.
