MMMMM----- Recipe via UNREGISTERED Meal-Master (tm) v8.01 Title: Oven Fried Chicken Categories: Poultry, Entree, Low-fat Yield: 6 servings 1 1/2 ts Chicken Coating Mix (recipe) 1 c Pancake Mix (recipe); or -packaged pancake mix 2/3 c Water; hot 2 tb Vegetable oil; (or 1/2 that - for low-fat) 1 Fryer chicken; cut up (3 1/2 - to 4 lbs.) This is really EXCELLENT, but makes a huge mess in the pan. Line the baking pan with foil or baking parchment so that you can just discard it. To reduce fat, remove skin from chicken pieces and reduce oil (as indicated) in the batter. Combine all ingredients except chicken in a bowl. Blend will. Dip chicken pieces in batter and put on (lined) baking sheet. Bake uncovered for 40 to 50 minutes, until golden brown and tender. Note: Lacking the pancake mix, you can substitute a mixture of 3/4 c. flour, 1/4 c. instant nonfat dry milk, 2 ts sugar, 1 ts baking powder, and 1/2 ts. salt.
