Brush the sides of the boned chicken legs with oil, place a slice of cheese on the meaty side, and sprinkle with with salt, pepper, garlic and rosemary. Wrap the chicken, pulling the loose skin from the edges of the leg and tucking in the meat to make a neat bundle. Tie each with string and brush with remaining olive oil.
