MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Popcorn Chicken Categories: Poultry, Vegetables, Dairy, Chilies Yield: 4 Servings 1/2 c Buttermilk 2 lb Chicken; boned, skinned, - in 1" pieces 1 1/4 c A-P flour 1 1/4 ts Salt 1/2 ts Pepper 1/2 ts Garlic powder 1/2 ts Onion powder 1/2 ts Paprika 1/8 ts Cayenne pepper Oil; for deep-fat frying Place buttermilk and chicken in a large bowl. Cover; refrigerate at least 30 minutes. Drain; discard buttermilk. Pat chicken dry. In a large bowl, combine flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne. Add chicken, toss to coat. Heat oil in a Dutch oven over medium-high heat; working in batches, fry chicken pieces until browned on all sides and chicken is cooked, 8 to 10 minutes.
