MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Creamy Curried Chicken Categories: Poultry, Curry, Rice, Vegetables, Greens Yield: 4 Servings 1 1/2 c Uncooked instant rice 1 lb Chicken; boned, skinned, - in 1" pieces 2 ts Curry powder 3/4 ts Salt 1/4 ts Pepper 1/2 c Onion; chopped 1 tb Canola oil 13 2/3 oz Can coconut milk 2 tb Tomato paste 3 c Fresh baby spinach 1 c Tomato; chopped Cook rice according to package directions. Meanwhile, sprinkle the chicken with curry, salt and pepper. In a large skillet, saute chicken and onion in oil until chicken is no longer pink. Stir in coconut milk and tomato paste. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until thickened. Add spinach and tomato; cook 2 to 3 minutes longer or until spinach is wilted. Serve with rice.
