MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Peanut Butter Chicken Skewers - Low Carb Categories: Chicken, Grill, Nuts, Dairy Yield: 4 Servings 1/2 c Creamy peanut butter 1/2 c Water 1/4 c Soy sauce 4 cl Garlic; minced 3 tb Lemon juice 1 1/2 tb Brown sugar twin, or - Splenda 3/4 ts Ground ginger 1/2 ts Crushed red pepper flakes 4 Chicken breast halves; - boneless, skinless 2 c Red cabbage; shredded Green onion tops; sliced In a saucepan, combine the first eight ingredients; cook and stir over medium-high heat for 5 minutes or until smooth. Reserve half of the sauce. Slice chicken lengthwise into 1" strips; thread onto skewers. If using bamboo skewers, soak them in water for at least 20 minutes. Grill, uncovered, over medium-hot coals for 2 minutes; turn and brush with peanut butter sauce. Continue turning and basting for 4 to 6 minutes or until juices run clear. Place cabbage on a serving plate; top with chicken. Sprinkle with onion tops. Serve with reserved sauce. This is what I did: I used 5 chicken breast halves and cut them into strips. I cooked them quickly in a non stick pan, in two batches. At the same time I was slowly cooking the sauce ingredients in a pot. I used 2 tb bottled minced garlic. 1/2 ts pepper flakes were not enough. Next time I will more than double. I used 1-1/2 tb brown sugar twin in place of the sugar. If you don't have that, splenda will probably do. I omitted the ginger, we don't like it. When the chicken was done and the sauce was melted, I added the sauce along with the first batch of chicken back into the non stick pan. I added one can of baby corn cut up and a can of sliced water chestnuts. They didn't add too many carbs for us and my daughter loves them.
