MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Avocado Crab Boats Categories: Fruits, Seafood, Vegetables, Chilies, Herbs Yield: 8 Servings 5 md Ripe avocados; peeled, - halved 1/2 c Mayonnaise 2 tb Lemon juice 12 oz Lump crab meat (2 cans); - drained 4 tb Fresh cilantro; chopped, - divided 2 tb Chives; minced 1 Serrano pepper; seeded, - minced 1 tb Capers; drained 1/4 ts Pepper 1 c Pepper jack cheese; shredded 1/2 ts Paprika Lemon wedges Preheat broiler. Place 2 avocado halves in a large bowl; mash lightly with a fork. Add mayonnaise and lemon juice; mix until well blended. Stir in crab, 3 tb cilantro, chives, serrano pepper, capers, and pepper. Spoon into remaining avocado halves. Transfer to a 15x10x1" baking pan. Sprinkle with cheese and paprika. Broil 4 to 5" from heat until cheese is melted, 3 to 5 minutes.
