MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lime-Marinated Mackerel with Orange-Cucumber Relish Categories: Fish, Marinades, Relishes Yield: 4 Servings 4 x Mackerel fillets (8 oz ea) Salt & pepper 6 tb Fresh lime juice 2 Navel oranges; peeled, -seeded, bite-size pieces 1 lg Cucumber; peeled, 1/4" -half-moon slices 1/2 sm Red onion; halved and thinly -sliced 2 tb Vegetable oil 3 tb Red-wine vinegar 3 tb Orange juice 1 ts Red pepper flakes 2 tb Fresh mint; finely chopped 2 tb Olive oil Marinate fish with lime juice, salt, pepper for 2-4 hours (no more than 2 hours for salmon). Make the relish: Combine remaining ingredients except olive oil. Season, mix well, cover, and set aside. Preheat broiler. Pat fillets dry, brush with olive oil, and season. Broil, skin side up, about 5-7 minutes total. Do not turn. To check for doneness, slide a sharp, thin knife into one piece, and peek inside. Serve, accompanied by relish.
