* Exported from MasterCook * Fish In Parchment Recipe By : Ron West Serving Size : 1 Preparation Time :0:05 Categories : Fish And Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 ozs salmon fillet 1 tsp Dijon Glaze 1/8 c bell pepper of 3 colors seeds, pits removed and julienne-cut 1 tsp fresh lemon juice 1/8 red onion thinly sliced and separated into rings 1 12 inch squa parchment paper Preheat oven to 450 degrees F. with oven rack in center of oven. Brush fish with glaze or other seasoning and place it in center of parchment. Sprinkle lemon juice over the peppers and place them and onion slices around the fish. Wrap the edges of the paper over the fish, rolling edges tightly to prevent steam from escaping. Place the parchment package in an oven-proof pan and bake for 5-8 minutes, until fish is cooked. Remove from the oven, and prick the parchment package with a sharp knife to release steam. - - - - - - - - - - - - - - - - - - NOTES: This is easy and fun to make, and it adds dramatic flare to dinner. It takes longer to preheat the oven than it does to cook the fish! To serve, transfer the package onto a preheated plate and let diners open their own. Serve with salsa or chutney of your choice.
