* Exported from MasterCook * Fish Cakes with Horseradish-Sour Cream Sauce Recipe By : In-Fisherman Magazine; www.in-fisherman.com Serving Size : 12 Preparation Time :0:00 Categories : Fish And Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 lb Fresh fish fillets 1 1/4 c Potatoes -- cooked, mashed 2 Eggs -- beaten 2 ts Salt 1 ts Fresh pepper 1 bn Green onions -- minced 1/4 ts Ground cardamom 1 1/2 ts Orange peel -- grated 1 tb Fresh cilantro -- chopped 2 tb Fresh parsley -- chopped Flour or corn meal -- - for rolling cakes 4 tb Vegetable oil Sauce: 1 Carton sour cream 1 ts Horseradish -- or to taste Pat fillets dry with paper towel then place fillets in food processor or grinder. Cook and mash potatoes. Set aside and cool. In a bowl, mix together all remaining ingredients except vegetable oil. Add fish and potatoes to mixture, shape into 2" patties. Dust patties in flour or corn meal. Heat vegetable oil in saute pan until hot. Saute cakes until golden brown on both sides. The should be firm but not overcooked, about 3 minutes on each side.
